Approved Persons Course for Thermally Processed Low-Acid Foods

DWC FoodTech’s Approved Persons Course for Thermally Process Low-Acid Foods (previously running for over 30 years in partnership with CSIRO) provides advanced training for professionals responsible for the development, evaluation and control of thermal processes for low-acid foods in hermetically sealed containers. Designed for industry, the course builds the practical and technical capability needed to develop safe, compliant and commercially viable thermal schedules.

The course is delivered over five days and includes intensive instruction in thermal processing theory, practical heat penetration work, process calculations, tutorials and exam preparation. Two examinations are completed on the final day, covering both theoretical concepts and practical thermal processing calculations.

Key learning areas include thermal processing principles, microbiology relevant to low-acid canned foods, heat transfer and lethality calculations, process deviation assessment, retort operation and over-pressure principles, and validation of retort performance.

This advanced course is best suited to participants with prior retort knowledge or operational experience. Completion of the Retort Supervisors Certification Course (RSCC), or equivalent experience, is strongly recommended to support success in the program.

Participants who successfully pass the examinations will be recognised by regulatory authorities in Australia and New Zealand to submit new thermal process schedules and manage process deviations.
