Approved Persons Course for Thermally Processed Low-Acid Foods OLD
This course is presented by DWC FoodTech and is run as a partnership with CSIRO. The course provides participants with the necessary skills to design safe and commercially viable thermal schedules for the processing of low-acid food products in hermetically sealed containers.
The course involves four days of lectures in thermal processing, practical heat penetration work, process calculations, tutorials and preparation for exams. Two examinations will be given on the fifth day and these cover theory and practical thermal process calculations.
The course is presented at a tertiary level and requires participants to gain a detailed understanding of thermal processing in retorting systems and mathematical calculation in a short time period. Whilst not a pre-requisite, it is strongly recommended that participants who complete this course have either appropriate experience with retorting systems or have completed a course such as the Retort Supervisors Certification Course or equivalent.
Participants who successfully pass the examinations will be recognised by Australian and New Zealand regulatory authorities to submit new thermal process schedules and handle process deviations.
